The What
The magician shuffles the deck and then has a spectator grab a bunch of cards from anywhere in the deck, and they shuffle that packet underneath the table. Then the magician starts dealing cards on the table, and someone else says stop; they take a small packet of cards, shuffle them and then choose which cards from the packet to keep or discard. They do this through the entire deck and end up with a small heap of cards. The second spectator brings their packet back up above the table. Each spectator then counts the number of cards from their heap, and impossibly the number in each packet is identical. Then, in an even bigger coincidence, both packets contain each other's mates in exact matching order.
